Sky High Syrah – Dark Sky

Sky High Syrah Dark Sky bottle — Soaring Wines, Willcox Arizona

Crafted For Depth And Elegance

Sky High Syrah returns with a bold new profile in our second series release: Call Sign: Dark Sky.

This co-fermented blend of 75% Syrah and 25% Viognier delivers a powerful yet lifted experience.

Dark Sky is the next evolution of our estate-grown reds — a sophisticated journey through the high-desert terroir of Willcox.

Tasting Notes

  • Appearance: A strikingly deep, opaque garnet with a vibrant magenta rim that hints at the intensity within.
  • The Nose: The Viognier co-fermentation works its magic here, offering “sky high” floral aromas of dried violets and lavender that dance over concentrated notes of crushed blackberries, dark plums, and cracked black pepper.
  • The Palate: Rich and full-bodied, saturated with dense flavors of blackberry jam and black currants. The higher Syrah percentage provides a velvety, plush texture layered with notes of dark chocolate, espresso bean, and a refined, savory herb backbone.
  • The Finish: Expansive and enduring, staying with you long after touchdown. Dark Sky concludes with fine-grained tannins and a warm, toasted vanilla character, leaving a lingering trail of dark cocoa and spice.

Food Pairings

  • Main Course: Grilled lamb chops with rosemary, herb-crusted pork tenderloin, or a rich beef bourguignon.
  • The Cheese Board: Aged Gouda, sharp cheddar, or a bold blue cheese.
  • Why It Works: The aromatic lift and velvety tannins cut through rich fats while complementing savory, earthy seasonings.

From The Flight Deck

The Sky High Syrah series is an exploration of how light and shadow play together in the bottle. While our original release — now code-named Twilight Sky — used a 60/40 Syrah-Viognier split for a medium-bodied approach, Call Sign: Dark Sky shifts the gauges to a bolder 75% Syrah.

Both Sky High Syrah releases share a single listing. After your order, we will confirm which release you would like — Twilight Sky (60/40) or Dark Sky (75/25) — before shipping.

Paper airplane launching from an aircraft carrier — Soaring Wines, Willcox Arizona

This evolution creates a wine that is noticeably darker and more structured, reflecting the vastness of the Arizona night sky. The secret to its elegance is co-fermentation: rather than blending finished wines, we ferment our estate-grown Syrah and Viognier grapes together in the same tank. This traditional Rhône-style technique chemically stabilizes the deep color of the Syrah while allowing the floral aromatics of the white Viognier grapes to become permanently woven into the red fruit profile.

Met up with Soaring Wines in Prescott. In love with the Full Throttle Petite Sirah. Dark Sky was awesome too.

My husband and I recently attended an evening event at the tasting room on historic Railroad Avenue. We sat and visited with friends and listened to wonderful music! The atmosphere was relaxing, conversations were enjoyable, and the choices of wines to sample fantastic! It was just what we needed! We so enjoy the owners and their lovely woman giving samples. I highly recommend that folks check them out!
