Sky High Syrah – Twilight Sky

Sky High Syrah Twilight Sky bottle — Soaring Wines, Willcox Arizona

Lifted, Floral, And Where It All Began

Twilight Sky is the original release in our Sky High Syrah series — the wine that started the ascent.

This co-fermented blend of 60% Syrah and 40% Viognier trades some of Dark Sky’s power for aromatic lift and a lighter frame.

Grown at over 4,000 feet in the Willcox high desert, it is a medium-bodied red with unusual floral character.

Tasting Notes

  • Appearance: Light ruby, translucent to the rim.
  • The Nose: Vibrant apricot and peach — the Viognier making itself known.
  • The Palate: Light to medium-bodied, opening on stone fruit before rich cherry and berry take over.
  • The Finish: A fresh red cherry finish, lively and lingering, with gentle spice underneath.

Food Pairings

  • Main Course: Roast chicken with herbs, grilled pork tenderloin, salmon, or mushroom risotto.
  • The Cheese Board: Young Manchego, Gruyère, or a mild goat cheese.
  • Why It Works: The higher Viognier ratio brings aromatic lift and brighter acidity, letting it pair across lighter dishes where Dark Sky would overwhelm.

From The Flight Deck

Twilight Sky is where the Sky High Syrah series began. Named for the hour when the desert sky softens from blue to amber, our original release paired 60% Syrah with 40% Viognier — a generous share of the white grape, co-fermented rather than blended, giving the wine its signature floral lift.

Both Sky High Syrah releases share a single listing. After your order, we will confirm which release you would like — Twilight Sky (60/40) or Dark Sky (75/25) — before shipping.

Co-fermentation means the Syrah and Viognier ferment together in the same tank rather than being blended as finished wines. It is a traditional Rhône technique that weaves the white grape aromatics permanently into the red fruit. Twilight Sky carries the higher Viognier ratio that defined our first vintage; its successor, Call Sign: Dark Sky, shifts the gauges to a bolder 75/25. With limited bottles remaining, this is the last chance to taste where the series began.

My husband and I recently attended an evening event at the tasting room on historic Railroad Avenue. We sat and visited with friends and listened to wonderful music! The atmosphere was relaxing, conversations were enjoyable, and the choices of wines to sample fantastic! It was just what we needed! We so enjoy the owners and their lovely woman giving samples. I highly recommend that folks check them out!
