Full Throttle is the biggest wine in our fleet — Petite Sirah with Cabernet Sauvignon, fruity and full-bodied.
Dark, dense, and unapologetic, with plum and cherry riding on spice and chocolate.
Grown at over 4,000 feet in the Willcox high desert, where cool nights keep all that power in balance.
Tasting Notes
- Appearance: Inky purple-black.
- The Nose: Black beauty plums and smoky dark cherry, with spice behind.
- The Palate: Fruity and full-bodied, dense dark fruit enriched with spice and dark chocolate.
- The Finish: Long and powerful, the chocolate and smoke holding on.
Food Pairings
- Main Course: Grilled ribeye, smoked brisket, venison, or short ribs off the bone.
- The Cheese Board: Aged cheddar, smoked gouda, or an assertive blue.
- Why It Works: Petite Sirah brings tannin and weight enough to stand up to charred meat and heavy smoke, where a lighter red would disappear.

Full Throttle is what a pilot calls for when there is no more to give — the throttle wide open, everything the engine has. It suited a wine built the same way. Petite Sirah is one of the darkest, most tannic grapes there is, and we let it lead.

Before it had a name of its own, this wine bottled simply as Petite Sirah — and the 2019 took Best of Class at the 2023 Arizona Governor’s Cup. What you see here is a newer batch carrying the Full Throttle label, built to the same spec.

My husband and I recently attended an evening event at the tasting room on historic Railroad Avenue. We sat and visited with friends and listened to wonderful music! The atmosphere was relaxing, conversations were enjoyable, and the choices of wines to sample fantastic! It was just what we needed! We so enjoy the owners and their lovely woman giving samples.
