Catapult Cab – Cabernet Sauvignon
Catapult Cab is our Cabernet Sauvignon, launched off the flight deck of the high desert of Willcox Wine Country and built for depth, structure, and a confident finish. This bold red showcases the character of Cabernet Sauvignon while drawing added complexity from a splash of Cabernet Franc and Petite Sirah. Rich fruit, balanced tannins, and a powerful close make this a wine that’s equally suited for cellaring or enjoying now.
Tasting Notes
Dark blackberry and cassis lead the way, followed by layers of plum, cocoa, and subtle spice. Full-bodied and structured, with firm tannins that soften into a long, smooth finish.
Food Pairings
Grilled steak, rosemary lamb, braised short ribs, or rich pasta dishes. Also pairs beautifully with aged cheeses and hearty winter meals.

My husband and I recently attended an evening event at the tasting room on historic Railroad Avenue. We sat and visited with friends and listened to wonderful music! The atmosphere was relaxing, conversations were enjoyable, and the choices of wines to sample fantastic! It was just what we needed! We so enjoy the owners and their lovely woman giving samples.
